One thing I found out about this awesome chatty crew is that we do a LOT of our own cooking because we like it or due to health reasons to be sure we don't eat something we shouldn't.

So, I thought it would be cool if we gathered up recipes we could share on the forums under Real Life - Gaiscioch Cookbook.

But I want to go further and put some of them in the magazine, as well. The next magazine comes out around the beginning of June and we are in the writing and compiling mode through April. If you also want the recipe in the magazine you can email me the recipe and attach a photo (try not to send one already edited because we can more easily work with fresh graphics). If you mail briseadh@gaiscioch.com it will forward to me.

Please put black desert crew recipe in the header so I don't accidentally delete the mail if it winds up in my junk box. =) At the moment my email is simply a forwarding machine on this site. 

Seeing that the magazine comes out in June aim for good things that can be grilled or make good summer foods or anything that tastes good whenever!!!

Its a bit of a mess lol but here are some of my recipes :)  Part of a blog I did for friends a long time ago :) I think i removed all the bad language :) Well I tried :)

 

Get a couple of pounds of shrimp uncooked
Put them in a bowl.
Add Chopped Garlic and Onion, Scallion, Habenaro or ya favorite hot pepper.
Fresh Chopped Cilantro and Basil
I dont know if you can get them where you are but Trader Joes sells these Baby Heirloom Toms
That just Friggin Rock. Id put in enough to equal half the shrimp.
Mix in some First Press Olive Oil
Juice like 10 lemons add the juice.
A cup of good sauza and no not Jose Quervo make sure the bottle says Sauza
Sauza means 100% Tequilla crap like Jose is only 20% Tequilla and 80% Grain.
Toss in two Cinnamon sticks
Salt and Pepper
Mix it all up cover it and put in fridge for 24 hours.
Snack Away

Ok Get some Cannoloni shells,
Par boil and shock them you know the deal.
Stuffing,
If you got a pestel if not the Quisinart will do.
Good and I mean good black olives, Go to the local arabic market and get some aged kalamats if you can.
Pine nuts, garlic, fresh thyme, Sundried Toms, Salt and Pepper.Juice of a Lemon.
Chop it fine in the quiz
In a mixer with a paddle
Room Temp Goats cheese (Or any cheese you like)
Egg Yolks
Sour cream
Beat it smooth and soft (should not be liquidy at all) more like toothpast thickness
Fold both of them together and Stuff ya Cannolonis.
Cover with ya favorite Marinara Bake till done and melt some cheese on top.

Ok back from Vacation so lets make what an Aussie pal described to me this week end.
Cook off some good Bacon the best you can find.
Carmelize some onions and garlic.
Into a Pie crust
Beat eggs and pour on top.
Add ya favourite Cheese.
Cover with Crust.
Bake at 350 for about 35 mins.
He called it EGG and Bacon pie.
I said its a bloody Quiche
He said that its got a crust on top.
Real men dont eat Quiche.
I disagree Real Men eat quiche

Get a Giant Ass Pot
Get a Pork Butt, Shoulder or Short Rib if you can get it and some spare ribs.
Doesnt matter just a crap load of pork ive made it with cheeks and feet before and it was amazing.
Oil in the pot brown off all the meat. Then remove it from pot for a few mins,
Toss into the pot chopped Onion lots of it and garlic. Carmelize it.
Through back in the meat and cover with chicken stock.
Add Bay leaves dried sage and dried thyme.
Add black beans a crap load of them.
Bring it all to a boil. Then simmer and check it constantly and stir it scraping the bottom.
You want to cook this for 6 to 8 hours. Keep adding stock if the water starts to get to low
so have plenty on hand. When you get to the 6 hour mark its a good idea to remove any of the bones if
you meat had bones in it.
Then at the same 6 hour point your going to add a couple of pounds of the best sausages you can find.
Serve with White rice or manioc if you can find it.
This is my bastardized version of the national dish of Brazil that they serve on Sundays for brunch.

My Bread Pudding and its not ya Grandmas bread pudding.
Go buy a crap load of Croissants and let them sit out for a day or two.
Break them up into a bowl.
Add Currant, Sultanas, Rasins, dried Cranberris and Cherries,
White choclate Chunks add as much or as little as you like for all of the above
Ok in a Seperate container and you have to measure ya liquid here
Combine Heavy Cream and a Bottle of Baileys or Kalua or Rum or Scotch what ever ya like my fav is Scotch
Add raw sugar till its a sweet as you like it.
This is where you measure ya liqud and if ya smart you did this in a large bowl or
Container with measurements on the side.
How many quarts of liquid do you have (its 8 eggs per Quart)
so if you got 2 quarts of liquid beat in 16 eggs
Combine them all together and put into a deep baking pan.
350 until there is no wiggle
Serve with Ice Cream of Custard your choice


Go buy premade pie crusts you need two per if ya gona make more than one.
Yes I know sacralidge but were about easy and this makes it easy.
In a pan with olive oil Sautee off
Chopped Garlic, Jullien Onions White and Yellow (This is an onion recipe so use a crap load)
Toss in fresh Thyme and Sage chopped salt and pepper. Let Cool
Par boil some Yukon golds and slice them up kinda thick
Put the cooled Onion mix into the pie shell.
Layer the top with the slice yukons.
Top with grated Cheddar, Decent White cheddar will make all the diff but just use ya fav.
Then take the other empty pie crust and put it on top and pinch it together with the bottom.
Eggwash and Bake at 350 till golden.
Yes you can always add a load of bacon or ham if you like but try it with out you will be suprised.

Dessert to day and its cold so this is one of my Fav cold weather desserts.
Dice some Granny smiths and ya Fav Pears up.(I like big Chunks)
In a Frying pan add some water bring to boil.
Then add some Raw sugar and boil it down (Do not leave it alone watch it ya dont want it to burn)
When it starts to turn caramel color Toss in the Apples and the Pears.
Add Raisin and Sultanas and Chopped Dates.
Add fresh Ground Cinnamon and Nutmeg and All spice, (Yes you should have a seperate coffee grinder just
for this Scrape a Vanilla bean or two
Add a few table spoons of honey (This should all be done quickly you dont want to over cook the Fruit)
Take of the heat put on a flat sheet pan and put in the fridge to cool.
Lay out ya Phyillo dough. Place cooled Fruit mix onto it and roll it up.
Eggwash and sprinkle with Raw sugar.
Bake at 400 till golden brown.
Serve with Hot Custard or if ya adventurous a nice piece of White cheddar melted on top

Take a chicken spray it with pam.
Cover it in Curry powder,Sumac,Salt and Pepper.
Roast it till golden.
Toast Cumin and Fennel in oil (it will kinda pop like pop corn but dont burn it)
Add diced onion and diced carrots, Carmelize them.
Add Rasins and Sultanas.
Curry Powder as much as you like
Hot pepper chopped as much as you like.
Add cream and cook till its reduced.
Put the Chicken on a plate and pour the carrots on top
Serve with your favourite rice.

Beat a bag of tortilla chips with a rolling pin.
Pour contents into deep baking baking dish.
In a pan cook of chorizo, onions, garlic, hot peppers all chopped.
Toss in a few cups of ya fav salsa, any kind will work.
Pour on to the chips.
Beat a dozen eggs pour on to chips and mix it all together.
Dollop sour cream all over the top of the mix.
Cover with your favourite grated cheese (I like monterey and cheddar)
Bake till there is no wiggle at 350
Serve with Guac and enjoy breka

Ok put jasmine rice and water in a pot if you dont know how to make jasmine rice google it.
Before you turn the heat on the rice.
Pull all the meat off two rotissery chickens. Grocery store ones will work this is meant to be easy.
Add it to the pot dont mix it up just on top of the rice and water.
Add a bay leaf, chopped ginger, garlic, and any chopped hot pepper you like.
Add two cans of new potatoes (Drained of course)
Do not mix it up just leave it all were it fell in the pot.
Then turn on the heat and bring the liquid to a boil.
Remove from the heat and put a lid on it and walk away for 30 mins.
Remove lid and stir it all together and you got one hell of a good snack

For those of you that are on a diet here is some good winter fare:)
Bacon, Bacon and more Bacon can even add sausage too if you like.
Chop Bacon and fry it in pan till its as cooked
Toss in diced white onion and garlic and caremlize them
Add a few cups of cream and some chopped sage and thyme and white pepper.
Reduce it till it coats a spoon.
Take off the heat if you do the next step on the heat it wont work.
Add a cup or two of Parmesan or it put one cup of parm and another cup of your fav cheese
its your dish put in what you like. Cant go wrong with cheese
Oh a note on the Parm dont put crappy Parm in it buy the real thing its worth it if the
cheese tastes like crap by itself its gona taste like crap in your dish.
Then add four or five egg yolks and mix it all together.
Toss all of it into you favourite pasta and serve.

Garlic, Ginger, Green Onions, Habanero, Carmelize all of it.
Coconut milk, Rice Vinegar, Peanut Butter, Reduce
A load of Shrimp and Chopped Basil.
Toss into ya fav rice noodles and Snack is ready.
Fried Egg is Optional
Since I just had an awsome burger for lunch lol here is my favorite burger.
Add chopped Habanero and white onion to your meat make into burgers
Grill them anything other than medium rare and there is something wrong with you.
Put burger on bun Top with Advacado slices, 1 fried Egg (Over Easy), Good Verde Salsa, Pepper Jack cheese and me its messy but so good

Fish what ever the hell kind you want filets if ya scared and whole if your brave.
I prefer Red Snapper Whole,
Put it in a deep dish pan.
Add chopped garlic, green onions, ground fresh ginger, chopped white onion.
Add a pound or two of shrimp, 2 cans of new potatoes (can use par boiled fresh ones too)
Couple of Bay leaves, Cinnamon stick, grind a nutmeg.
1 or 2 habaneros chopped depending on how brave you are. Scotch bonnents are better
if you can find them.
Pour in a can of coconut milk then cover the pan in tin foil so its sealed.
Bake for about 350 about 45 mins you will be able to smell when its done:)
Serve with Rice and Peas(That means red beans for those that dont understand)

Well since its thanksgiving next week, here is my stuffing recipe.
Go find a bakery that makes good bread dont buy the crap from grocery store.
Two or three large loaves of bread.
Carrots 1 bunch
Celery 1 bunch
Onion 2 large white ones
Garlic cloves (Roast them) like 20 cloves
Chestnuts Roast and peel them lol like 30 chestnuts
Sage,thyme,Fresh a lot of it (a cup of each chopped)
Butter 2 lbs ,Chicken Stock 1 large can or 4 small ones
Liver yes liver god dam it to not use it is sacrilidge.
If you can afford Goose liver by all means use it if not a tub of
Chicken livers will do.
Chop up the liver and cook it in a big pot with a bit of oil.
Add the Carrots, celery, and onions
Toss in the roasted garlic cloves (if you dont know how to roast garlic google it)
Toss in the chestnuts (If ya dont know how to roast them bloody well google it)
Toss in the sage and thyme, Salt (Use at the very least kosher salt if I see any
one cooking with mortons I will hurt you)and pepper
Add the butter and the chicken stock
Bring to a boil and remove from heat and add the cubed good and I mean good loaves
of bread you bought. Mix it all up good put a lid on it and walk away for half an hour.
Your done stuffing is ready, as Maxwell would say Fist the bird and put the rest
in a pan to bake

dont ask me why but I have a food craving today.
Put raw sugar in a bowl, Add the Juice of two lemons.
Tub of Crème fraiche (you can buy it at trader joes)
Pinch of salt and whisk it together.
Quarter good Dates and add to bowl.
Fresh Figs Black or Green what ever you can get quarter and toss in.
Chop a good amount of fresh Mint and fold it all together.
Serve on some Vanilla Ice cream
There ya go best sundae on the planet

Pork Chops, Pound them flat and salt and pepper them well, Season then god dam it
Peel, core and quarter some pears as many as you like 1 per chop is my norm.
Chopped Garlic and Shallots
Butter, Veg oil, Calvados (or good brandy), Chantrels (Or lobsters, hedgehogs, morels) Or all of them
Grill the pork chops
Cook off the Garlic and the shallots in a bit of veg oil.
Toss in the pears cook till they are fork tender,
put the grilled pork chops on top,
Then put the shrooms on top of the chops.
Take away from the flame we dont want to flame the booze off.
Add the calvados, put a lid on it. put back on the heat.
About 5, 6 mins yes it sounds nuts but we are steaming the shrooms
Take out the Chops, Pears and Shrooms and plate them.
Deglaze the pan with some more calvados and finish with butter, salt and pepper
and pour it over the goodies
The dish that made my brother say HOLY SHIT

Ok back from Vacation Grind Ginger Snap Cookies, Mix with melted butter.
Push and form crust into ya fave cake round or spring form pan. Room Temp Cream
Cheese into the mixer, raw sugar, eggs, grind a large piece of ginger, add to the mix,
Add one Jar of Lemon Curd. Pour Batter into pan, water bath it and bake at 325 till done.
Put it in the freezer over night. Take out of pan a few hours before you want to serve it
and decorate it how ever the you want I like the standard sourcream and icing sugar

No one will like this but its one of my favourites lol
2 cans of Mackeral put in a bowl, add stone ground mustard, Italian bread crumbs, a couple of eggs, Salt Pepper
Yes you are making Mackeral Meat balls Deep Fry the bastards in olive oil.
Put them in a Deep Baking pan,
In another pot sautee off some Garlic and shallots, Black Cherries and Pork fat.
Add Cream and Stone ground mustard and fresh Sage, Reduce a bit.
Pour on top of Meat balls and bake @420 for 20 mins maybe 30 watch it so it dont burn
Top with white cheddar and brown it
Serve with what ever ya like pasta, rice or my fave pour it on old stale crusty sourdough


Right then go to a fish market and buy a big piece of Mako Shark, Black tip will work but I prefer Mako.
In veg oil toast, cumin seeds, coriander seeds, yellow and black mustard seeds and two cinnamon sticks.
When toasted and not burnt throw in some Diced Onion and carrots cook till golden. Toss in cubed shark and three bay leaves
Cook off and then add some cream and chick peas and some curry powder (I only ever use Ship brand madras curry powder in the green can). Reduce and serve with some Jasmine or Basmati rice.
That being said Google is ya friend, cause you got to have Dhal, Papapdums and Raijita with this dish

Uggg I want to make this soon, Garlic, shallots, Celery Onion Carrots, In pan carmelize them.
Seperate pot Boil water, quater a bunch of Yukon Golds (leave the bloody Skins on
Boil till fork tender and drain. Back to the frying pan add to the carmaelized stuff, Smoked mussels, Clams,
Smoked Herring (Bloody Kippers Put any fish or shellfish you like in who cares eat what you want too:)
De glaze the pan with Good Sherry not crappy Sherry lol Add some cream and reduce it.
Toss in the taters, ya fav fresh herbs ( I prefer Sage and Thyme for this ) Salt and Pepper it.
Toss it all into a large ass Pie dish or deep dish or hell use a frigging deep pot it dont matter.
Puff Pastry on top, eggwash it and toss it in the oven till golden.
Dig the in

Grilled Cheese today cause I have such a craving for this I am going shopping and making one as soon as I get home.
Trader Joes, 2 tins of Smoked Trout, a Wedge of Brie, Mayo, Stone Ground Mustard
Make Sarnies and griddle them in olive oil
For s Sake I am hungry

Ok were going salad today, Get two bags of your fav lettuce it dont matter, I like a mix or Red and Green
Oak, Mescalun, Mache and Arugla.
Dice a Granny Smith Apple or Two,
A crap load of Heirloom cherri Tomatoes,
Two Advacados diced
Put it all in a bowl
Add some stone ground mustard as much as you like
1 tub of creme fraiche
Juice of a lemon
Salt and Cracked Pepper
Chopped Fresh Mint
And here is the kicker buy a bag of those vegatable chips.
Beat the piss out of it with your fist.
Open and pour into bowl.
Mix it all together Done

Ok Lamb or Goat are my fave but any meat will work.
I am going to use Legs of lamb in this example.
Onions, Garlic, Scallions, Carrots, cook off in some veggie oil.
Add the legs of lamb cover with stock (Chicken or Veg)
Add 4 Bay leaves, As much curry powder as you would like.
Add a Cup each of Diced Dates, Diced Dehydrated figs, Diced Dehydrated Apricots, Currants, Sultanas, Raisins.
As many habaneros or hot peppers as you would like.
Let cook for 3 hours keep adding stock as needed.
Then pull the meat off the bone and chop up a bit
Add back in and reduce the liquid by 1/4
Add Cous Cous as much as needed if ya not sure just throw in a 4 cups.
Give it a stir and then take off the heat and put a lid on it and go away for 30 mins.
Then stir it up and serve One of my Fav dishes

OK Grill some Chicken, Whole or legs or breast or wings whatever just grill the er.
Take a large POT, Put in as much Wild Rice as you would like. I usualy go with 6 cups I love rice.
Measure out enough Coconut milk to cook the rice properly.
Add Garlic, Onion (I like White Onion), Scallions, all chopped how ever the hell you like.
Add Shrimp, or lobster or crab meat or all three if you have them.
Add Ham, pieces, diced or how ever the hell you want them.
Add Papaya same goes any way you want it.
Add Chopped fresh mint and ginger.
Bring to a boil as per instruction of the rice. When it gets to a boil take off the heat.
Place your chicken on top of the rice and goodies mixture.
Put a bloody lid on it and go away for 30 mins.
Come back take chicken out and fluff the rice (get your mind out of the gutter)
Enjoy

First press extra virgin olive oil, garlic, shallots, aged kalamata olives, heirloom cherry tomatoes, artchoke hearts, roasted red and yellow peppers, fresh sage, alderwood smoked sea salt, cracked black pepper, chicken tenderloins. Fry it all in a pan.

This will only work if you live in the north but you if your lucky you can buy
most of it at the store:) Take a Dutch Oven (insert Joke here) put it on some
coals in the fire. Add some vegatble oil, cook off 2 diced onions,
Stalk of celery diced and 4 carrots diced.
Then add 5 LB's of cubed prime rib and 3 cubed Taters.
Then fill the oven to the top with Guiness.
Now go for a walk and pick a brown paper bag of Morels, Beefsteaks and Chantrells.
Go back to camp Fill the oven with Guinness again. For the next 5 hours sit by fire and have a chat.
When the liquid gets low fill the oven with Guiness. When the 5 hours is up, add the
Shrooms you picked and half a bottle or more of Jack Daniels. Take 5 steps back
Enjoy the Flames Let that reduce by half and its ready

Dice a Granny Smith Apple a few of them. Get some black cherries, Put the cherries in a roasting pan. Add about 4 ounces of PORK fat and roast them till well done. Take pan out of the oven and toss in the diced apples. Grind Cinnamon and a Nutmeg in a coffee grinder (Yes this is important) and add that to the mix. (You can add sugar if ya like things sweet but I dont) Let it cool. Ok now the fun begins Roll out ya puff pastry then your going to layer a Slice on Manchego, some of the fruit, a slice of Brie, and repeat. Then top it with a good amount of chopped basil and roll it and seal it, egg wash it. 450 in oven till golden let cool a but before ya cut into it and your in heaven

Onion, Garlic, Celery, Palm Oil, Beef Short Ribs with Bones, (Brown OFF) Add Stock simmer all day with 3 Habaneros, Keep adding stock as the liquid gets low and stir so ya dont burn it. When the meat is falling off the bones add a jar of peanut butter to thicken Woot Peanutbutter Soup

Baked beans, andouille sausage, mushrooms, garlic cloves, smoked bacon, fresh sage, salt and pepper going in the oven
Jamon, onion, green oinion, basil, ginger, dragon peppers, banana chips, dried papya, coconut milk, chicken stock, cinnimon stick, hot madras curry powder, juice of two limes, will reduce by half, add two pounds os shrimp and two cups of cous cous and let sit with lid on off the heat. Will post end result later
