On first guess I will say artificer and armorer .. since those have the most market requests currently pending, but that would be a guild selfish assessment .. think of your toons as well.
while we have a post listing folks for the various professions and with the new purple stuff, specifically listing out who can make what, those looking for free crafting are in those 2 areas with requests that have not been filled.
Again this shouldnt be a chore for you, but those 2 areas seem to have the most orders 'right now' and do require plaques for the recipes .. 5 each per recipe, not to mention the 100+ plat out of pocket to make them. So think of all these factors.
Someone said that soon aka 1.5 that plaques maybe become universal, in that if you have say 5 unspent runecrafter plaques and that toon is also say an outfitter .. you may be able to convert for outfitter recipes .. since its not live, well who knows what will really happen .. but something else to think of.
It may be a good time to pick something and crift with that profession at 300 with the hopes of sharing it to a more difficult one for plaques aka artificer, or armorer (only cause it has the most recipes) or weaponsmith cause they are hard to earn if folks don't dps slow.

As a hint of what I do personally I try to have one gatherer .. then one armor,ws,outfitter since the materials semi intermix. Then I have a second toon for artificer,rune,apoth. Some may disagree cause they like to put an armorer or ws or outfitter with a rune person for more mats from runebreaking, but the same is true with salvage weapon or armor those pieces fit together as well. I don't see a right or wrong really, and it may just depend on your personal preference. My way may not be the most productive way, but works for me
