First of all, being 'the best you can be' in mmos isn't always about what feels right. You have to remain adaptable as the changes come. I've switched from 2H to Dual-wielding, and now 2H is once again top (on movementless fights, that is, so dual-wielding is actually still very viable)
However, that aside, it's easy to decide what stats to grab as a warrior. First of all, dodge and parry mean nothing, and usually Endurance counts for little as well. After all, you are a dps, not a tank. The main thing you need to shoot for stat-wise is pure, simple, crit chance (Until you reach the soft cap, however, which is 45%, or 40% with the bard buff, which you will always have in a raid). In fact, this may mean you want to use leather in some cases - there's nothing wrong with that, even if it makes rogues rage. Essentially, this is my stat priority, though I do like to stay in plate over leather, so may sacrifice a bit. Dex>Crit>Str/ap. It's worth remembering that (if I recall correctly) 1 dex = .25 ap and 1 crit, so you may want slightly less pure crit for more dex for both crit and ap. This is assuming you have the required amount of hit for your particular goals, which can be determined by mousing over the hit stat in the character stat pane.
Also, warriors have an excellent forum, with many top dps warrior posting parses, builds, etc. It's probably the best forum community for PvE dps I've ever seen, with tons of question answering and theorycrafting. You can basically choose one of those specs,read the write-up, and be set. You'll need to change from 51rb/15 champ to do competitive dps, sadly. All of these builds in the thread, however, are great. Additionally, the beastmaster one provides very nice raid buffs while not really hindering your dps in any manner.
