I took a more defensive approach with my Warrior, and I love every minute of it. Here is my build:

I use Mace/Shield for most of the work, as the Mace dazes and stuns. The shield is also great for stun. Healing shouts is the linchpin of the build, and with 6 soldier runes, I remove conditions from my group members.
I use Sword/Horn for mobility, but I also keep a Rifle in my pack that I switch to as needed.
With the superior sigil of bloodlust and the superior sigil of force on the shield, she has enough damage output to be a terror in PvE. If you use in WvWvW, switch the 'Bersker's Power' trait to 'Death from Above' and watch what happens when people try to attack the gates of your fort... just drop in on them and launch everyone around you without stability, and run back in. This can buy your team some time so that the zerg can come back and defend if they are elsewhere.
Offensive warriors are great, too, but try this out and see what you think. For leveling I was offensive, using a Signet Warrior build with the trait that gives you +40 precision per signet, and a greatsword.
