Good stuff, The only thing missing that I would add through my experience is once you tame (meaning you side on the horse), immediately get off the horse. Once tamed he/she will follow you through the end of time. You can then mount your regular horse and it'll follow you even if you run away at full sprint. If you're lucky sometimes they teleport instantly once you get to the stable, otherwise just wait and it'll show up. I've tamed over 200 horses now and none have run away. I even swam across a river and the critter will walked underwater (not die).
