Banana Bread
Dry Bowl:
1 3/4 cup regular flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
Wet Bowl:
3 - 4 bananas ***THE KEY to good banana bread is using almost rotten bananas - the darker and mushier the better - do not be afraid!
2 eggs
1/2 cup oil (I always use olive oil - sounds funny but works fine and better for you)
1 cup buttermilk ***If you don't have buttermilk - add 1 tablespoon lemon juice or white vinegar to 1 cup whole or 2% milk and let sit 5 minutes
1 teaspoon real vanilla (almond extract is a good substitute)
1 cup chopped walnuts (optional)
1 cup chocolate chips (optional)
Gradually add dry ingredients to wet until just mixed - don't overdo.
Bake in loaf pan at 325 degrees for 70 - 80 minutes. Toothpick inserted in middle should come out slightly wet.
